Below is my favorite trail mix recipe! I absolutely love trail mix as a healthy snack because it is packed with healthy fats, fiber, antioxidants, and more.
Every time I would look for trail mix at the grocery store they were always filled with added sugars, inflammatory oils, and other ingredients I didn’t like. Even the healthy ones weren’t that great or they were SO expensive #nothankyou. So, I decided to make my own!
This is also a snack that could last you all week. I end up bringing this with me to work most days and it's a great pick-me-up!
Pro tip: feel free to switch out the nuts for ones that you have on hand or ones you like more!
Here is a great option for glass containers to store your trail mix in - glass container
EQUIPMENT
- Baking sheet
- Glass container
INGREDIENTS
- 1 tsp coconut oil (melted)
- 1 cup cashews
- 1 cup pecans
- 1/2 cup goji berries (or any other dried fruit)
- 1/4 cup coconut flakes
- 1/3 cup pumpkin seeds (or sunflower seeds)
- 1/3 cup cacao nibs (or chocolate chips)
INSTRUCTIONS
- Pre-heat oven to 350 degrees
- Get a baking sheet or baking pan and add your favorite nuts (I did cashews and pecans)
- Coat them in 1 tsp of melted coconut oil and ½ tsp of sea salt
- Put in the oven for about 10-15 minutes (depending on how toasted you want them) and flip halfway through
- Let cool completely and then add nuts and all other ingredients into glass container and mix up
NOTES
Feel free to use any other kind of nut (almonds, macadamias, walnuts, etc.)
