Ingredients:
- 1 pint organic fresh strawberries, washed and dried completely
- 1 cup dark chocolate chips (70% cacao or higher for a healthier option)
- 1 tablespoon coconut oil (optional, for a smoother chocolate coating)
- Optional toppings: crushed nuts, shredded coconut, or freeze-dried strawberries
Instructions:
- Line a baking sheet with unbleached parchment paper.
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
- Dip each strawberry into the melted chocolate, letting excess drip off. Add toppings immediately if desired.
- Place the strawberries on the prepared baking sheet and refrigerate for 20-30 minutes, or until the chocolate is set.
- Serve and enjoy!
Raspberry Chia Pudding
Ingredients:
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or any milk of choice - I love using whole milk)
- 1 tablespoon organic maple syrup (or adjust to taste)
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh or frozen raspberries, mashed
- Optional toppings: fresh raspberries, granola, or dark chocolate shavings
Instructions:
- In a jar or bowl, mix chia seeds, almond milk, maple syrup, vanilla extract, and mashed raspberries. Stir well to combine.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 4 hours, or overnight, until the pudding thickens.
- Before serving, stir the pudding and add your favorite toppings.
Heart-Shaped Energy Bites with Chocolate Protein
Ingredients:
- 1 cup organic rolled oats
- 1/2 cup almond butter (or peanut butter) - make sure the ingredients are just organic peanuts or almonds and salt!
- 1/3 cup honey or maple syrup

- 1/4 cup mini dark chocolate chips
- 2 tablespoons chia seeds
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- In a large bowl, mix together the almond butter, honey or maple syrup, and vanilla extract until smooth.
- Add the rolled oats, chocolate protein powder, chia seeds, and salt. Mix until everything is well combined.
- Stir in the mini dark chocolate chips.
- Scoop small portions of the mixture and press it into silicone heart-shaped molds.
- Freeze for 15-20 minutes to set, then pop the bites out of the molds.
- Store in an airtight container in the fridge for up to a week.
