Healthy Homemade Granola

Not only is this granola incredibly easy to make with just a few pantry staples, but it’s also super versatile. Enjoy it on top of creamy Greek yogurt, blended into a smoothie bowl, or simply by the handful for a crunchy, satisfying snack.

Ingredients for Granola
Dry Ingredients:
- 1 ½ cups organic oats (I used bobsredmill GF oats)
- 1 cup pecans
- ½ pumpkin seeds
- ¼ cup coconut flakes
- ¼ cup hemp seeds
- 1 tbsp chia seeds
- 1 tsp salt ½ tsp cinnamon
- Dried fruit (optional)
Wet Ingredients:
- ¼ cup melted coconut oil
- ¼ cup maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 325 degrees and line a baking sheet with parchment paper.
- In a small saucepan over low heat, warm the coconut oil and maple syrup until the coconut oil is fully melted. You can also microwave in a large microwave-safe bowl for 30-60 seconds. Add in the vanilla extract and stir to combine.
- Grab a large bowl and add oats, pecans, pumpkin seeds, coconut flakes, hemp seeds, chia seeds, salt and cinnamon.
- Pour wet ingredients into the bowl and mix everything together.
- Spread mixture in an even layer on the baking sheet and bake for 30-45 minutes. Remove from the oven and cool for at least 15 minutes.
- Add in dried fruit if using and mix.
- Once cooled, serve and enjoy!
Note: Granola may be soft when first removed from the oven, it will get crunchy as it cools.
